ingredients
1 bundle clear noodles
1 clove garlic
1 tablespoon ginger
7 sprigs cilantro
30 whole peppercorns
1 medium onion
1 1/2 tablespoon soy sauce
1 tablespoon oil
1 teaspoon sugar
sesame oil
6 large whole shrimp
directions
Soak clear noodles in hot water for 10 minutes.
Snip noodles into smaller and more manageable lengths so they are easier to serve.
Ground garlic, ginger, cilantro and pepper in a mortar or food processor.
Peel and slice onion thin.
Heat up oil in a wok over low heat. Add ground ingredients and stir fry for 1 minute. Add onion and stir until onion is tender then turn off the heat. Drain clear noodles and add to the pan. Add soy sauce, sugar and a few drops of sesame oil then mix well.
Warm up the oven to 400 degrees F.
Pour the noodle mixture into an oven proof dish or clay pot. Add shrimp on top then cover and bake for 20 minutes.
Serve hot with rice.
