Panang Seafood Curry

ingredients
1 tablespoon panang curry paste
2 tablespoons fish sauce
6 ounces coconut milk
1 tablespoon palm sugar
1/4 cup basil
1/4 cup bamboo shoots, rinsed and drained
2 zucchini, sliced
3 ounces shrimp or scallops
directions
In a saucepan, combine curry paste, fish sauce, coconut milk and palm sugar. Simmer 15 minutes.
Add basil, bamboo shoots, zucchini and shrimp or scallops. Simmer 10 minutes.
Serve with jasmine or other rice.
