Baked Pork Chops Risotto

ingredients
6 pork chops, 1/2-inch thick
3/4 teaspoon salt
1/4 teaspoon black pepper
1 cup uncooked regular white rice
1 green bell peppers
chili sauce
2 1/2 cups water
1 envelope onion soup mix
directions
Preheat oven to 350 degrees F. Trim pork chops, if necessary. Season with salt and pepper.
In large skillet over medium heat, brown chops. Spread bottom of 13- x 9- x 2-inch baking dish with rice. Top rice with browned chops.
On each chop, arrange a green pepper ring, 1/2-inch thick, with a heaping teaspoon of chili sauce in center of it.
Into drippings in skillet pour the water. Stir in onion soup mix. Bring to boil, then pour into corner of baking dish.
Bake, covered, 1 hour or until chops and rice are tender.

While this isn't risotto, and it's really just a new name on an old favorite - we still loved it. The chili sauce added a nice kick (our memories of this recipe growing up were either ketchup or tomato sauce). We couldn't get all 6 chops to fit in a single layer in the pan, so your chop-layout might depend on the size of cuts that you use.
