Irish Tomato Soup

ingredients
4 tablespoons butter
1 carrot, peeled and diced
2 medium onions, peeled and diced
2 medium potatoes, peeled and cubed (1-inch cube)
6 cups chicken broth
8 medium tomatoes, chopped
1 tablespoon basil
2 cups milk
1 teaspoon salt, or to taste
1 teaspoon black pepper
directions
Melt butter in large pot over medium heat. Add carrots and onions; cook over medium heat until onions are translucent (about 5 minutes).
Add potatoes; stir. Add chicken broth and tomatoes. Stir well. Simmer for 1 hour, uncovered.
Add basil, milk, salt and pepper. Stir well. Simmer for 5 minutes, stirring occasionally.
