ingredients
4 slices bacon, chopped
2 cups chopped onions
4 cups cubed potatoes
2 teaspoons salt
1/8 teaspoon black pepper
2 cups water
2 cans (8 ounce size) minced clams
1 quart light cream
1/4 cup butter
directions
Saute bacon and onions in pressure cooker over medium heat. Add potatoes, salt, pepper, and water. Close cover securely. Place pressure regulator on vent pipe.
Cook 5 minutes at 15 lbs. pressure. Let pressure drop of its own accord.
Drain clams. Slowly add clams, 1 cup clam liquid, cream and butter.
Stir constantly.
Simmer 10 minutes in open pressure cooker.
