A tasty hint of lime is what spices up this recipe. Simple to make too.

4 cups chopped or pureed mangos
2 tablespoons lime juice
7 1/2 cups sugar
1 package (3 ounce size) liquid pectin
Combine first 3 ingredients, mix well and bring to a full rolling boil. Boil hard for 1 minute, stirring constantly.
Remove from heat and at once stir in liquid pectin. Ladle into sterilized 8 ounce glasses.

Lovely recipe! I used it as a filling in a cake (and what was left is going on toast as it is delicious).

Very good but sweeter than I imagined it would be. Oh, don't worry I'll definitely eat it all! Was looking for something with a bit more of a tart flavor though that I was hoping to get from the addition of the lime. Set up nicely.
