Mango Jam

ingredients

6 pounds mango
1/4 cup lemon juice
6 cups sugar
1 package dry pectin

directions

Wash fruit, peel, seed and cut in cubes. Mash with a potato masher or run through a food processor or blender - try NOT to puree.

In a 10 qt pan, mix fruit, lemon juice and pectin. Place over high heat; stirring constantly, bring to a rolling boil that cannot be stirred down. Still stirring, add sugar. Return to a boil that cannot be stirred down, then boil for exactly 2 minutes.

Remove from heat; skim off foam. Ladle hot jam into prepared half-pint jars. Wipe rims clean. Place lids on jars and firmly screw on rings. Process in boiling water bath for ten minutes.

    I got 6 1/2 cups of mango and used 5 1/2 cups of sugar. I got 9 8 oz. jars. Tasted great. And to gonesouth,if you look on your pectin info. it well tell you how to redo your jam so it will set up like it should. Been there done that. I give it a 5 star.

    I made this jam this morning and 6 lbs. was equal to 61/2 cups. I increased the sugar to 6/12 cups and used MCP pectin. It turned out great! I got 9 8-oz. jars.

    I was looking forward to writing a review saying how perfect this recipe is. Instead, I must offer criticism. Six pounds of mangos -- what does that equal in prepared fruit? Most jam recipes from pectin makers give the prepared fruit measurement because, really, six pounds of mangos, or any other fruit, can give a different yield of prepared fruit. My six pounds of mangos gave a yield of 12 half pint jars. Needless to say, one box of pectin did not work for this amount and my jam did not thicken as it should. So, I cannot really offer a good rating.

    The mangos I got apparently weren't all that ripe because I had trouble mashing them. Ended up pretty much pureeing them in the blender despite the warning not to. I think it all set up ok though anyway. It tasted really good. I think next time I might combine with strawberries.
