ingredients
4 cups dried corn
4 cups milk
3 cups heavy cream
3 teaspoons sugar
3 teaspoons salt
4 tablespoons butter
salt and freshly ground black pepper
directions
Place dried corn in a large bowl and cover with milk and cream. Cover with plastic wrap and refrigerate overnight.
Transfer corn mixture to a large saucepan. Add sugar, salt, and butter. Bring to a boil, stirring frequently, over medium-high heat, then reduce heat to low and simmer, stirring occasionally, for about 30 minutes.
Adjust seasoning with salt and freshly ground black pepper and serve.
