Diabetic Vanilla Candied Yams

ingredients
3 medium yams or sweet potatoes, peeled and sliced into rounds
10 packets sugar substitute
1 tablespoon vanilla extract
1 teaspoon nutmeg
1/4 cup margarine
1/2 cup water
directions
Place potato rounds in large saucepan. Sprinkle with sugar substitute. Add vanilla, nutmeg and water.
Bring to boil; lower heat and cook, covered, 20-25 minutes or until potatoes are tender and cooking liquid becomes syrupy.
