It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
Sherry-Cinnamon Marinated Sweet Potatoes

ingredients
6 large sweet potatoes
2 oranges
3/4 cup melted butter or margarine
2 cups sugar
1/4 cup orange juice
1/4 cup cream sherry or bourbon
2 teaspoons cinnamon
1 teaspoon vanilla extract
directions
Peel and slice raw potatoes. Slice orange into thin slices (1/4-inchthick).
Layer potatoes and oranges in greased 11 x 7 x 1-1/2 inch dish. Combine butter or margarine, sugar, juice, sherry, and cinnamon. Add vanilla if desired. Pour over potato mixture, cover and let sit at room temperature 1 hour to absorb flavors.
Bake, uncovered, at 350 degrees F for 1 1/2 hours, basting often.

Part of CDKitchen's 2005 Thanksgiving Menu. This recipe probably received the most rave reviews of anything on our menu. Not exactly heart-healthy, but neither is its traditional sweet potato marshmallow casserole counterpart. The oranges kept the flavor from being overly sweet making this a very enjoyable side dish to our meal. It's also an extremely easy dish to prepare.
