Cranberry And White Chocolate Pecan Pie

ingredients
1 pie crust for double crust 9-inch pie
1 1/3 cup fresh or frozen cranberries
1 cup pecan halves
1 cup white chocolate or vanilla chips
3 eggs
3/4 cup brown sugar, firmly packed
3/4 cup light corn syrup
3 tablespoons flour
1 teaspoon grated orange peel
directions
Preheat oven to 400 degrees F.
Prepare pie crust. Roll out bottom crust and press into deep, 9-inch pie pan, reserving other crust for another use. Layer cranberries, pecans, and chips in crust-lined pan.
In large bowl, beat eggs. Add brown sugar, syrup, flour and orange peel; blend well. Pour over cranberry mixture. Bake for 25 minutes, then cover with vegetable oil spray-coated foil to prevent burning. Bake another 10 to 15 minutes, or until crust is golden brown and filling is set in center.
Cool completely, about 2 hours. If desired, serve with whipped cream. Garnish as desired. Store in refrigerator.
cook's notes
If using pre-made refrigerated crust in pie tin, buy only deep dish. Otherwise, there will be too much syrup and the baking time will be too long.
