Slow Cooker Stir-Fry Lo-Mein

ingredients
2 tablespoons butter
6 boneless skinless chicken thighs, cut into bite-sized pieces
1 cup stir-fry sauce
1 can (5 ounce size) sliced water chestnuts, drained
1 medium onion, sliced
1 package (16 ounce size) fresh stir-fry vegetables
1/2 cup whole cashews, if desired
1 package (8 ounce size) lo mein noodles
directions
Melt butter in 10-inch skillet until sizzling; add chicken pieces. Cook Heat a medium-sized skillet over medium-high heat. Add the butter and stir until it melts. Add the chicken and cook, stirring, until the chicken is brown.
Add the chicken, stir-fry sauce, water chestnuts, and onion to the crock pot.
Cover the crock pot and cook on low heat for 4 hours. Turn the heat to high. Add the stir-fry vegetables and stir well.
Cover again and cook for 30 minutes or until the vegetables are crisp-tender, or desired doneness.
Meanwhile, cook the lo mein noodles as directed on the package.
Stir the cashews into the crock pot. Serve the stir-fry mixture over the cooked lo mein noodles.
