Buckwheat flour and cinnamon add an earthy, warm flavor to these tender, airy pancakes.
1/2 cup all-purpose flour
1/2 cup buckwheat flour
1 tablespoon sugar
2 teaspoons baking powder
3/4 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup skim milk
1 tablespoon vegetable oil
1 large egg
Combine first 6 ingredients in a large bowl. Stir well.
Combine milk, oil, and egg. Stir well. Add to flour mixture, stirring until smooth.
Spoon about 1/3 cup batter for each pancake onto a hot nonstick griddle or nonstick skillet. Turn pancakes when the tops are covered with bubbles and the edges look cooked.

These were so good I am posting my first ever recipe review. I have tried many buckwheat pancake recipes lately with disappointing results. This recipe however turned out perfect-same texture and fluffiness as regular pancakes and the addition of cinnamon (I was skeptical)went well with the buckwheat flavor, smelled wonderful too. I used whole wheat pastry flour instead of all-purpose flour, 2% milk and a tiny pinch of nutmeg. (I used a brand of milk that has excellent flavor, like milk used to taste when I was young. "Promised Land" milk from Harris Teeter grocery store).

used almond milk & organic whole wheat pastry flour in place of the all-purpose flour, cooked in cast-iron pan w/coconut oil and they were great & easy.

I searched through several recipes to find this one. I was a little worried at first, because of recent experiences with pancake recipes but I was very impressed. I followed it almost exactly except that I put half 2% milk and half water(since I did not have skim milk) and added cinnamon to taste. I also added a shake of nutmeg. I did not change the wet to dry ingredients though and they really turned out perfect. I am glad I found this recipe and invite others to try it out.

This is just like my mom used to make. The thickness and consistency of the pancake is perfect and the cinnamon adds a delicate flavor and aroma. Follow this recipe exactly and it won't fail. My kids ate it up without saying a word, and that's a feat in itself!!
