1 cup flour
1/4 cup brown sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup cold butter
1 tablespoon vanilla, divided
3 cups miniature marshmallows
1 can (14 ounce size) sweetened condensed milk
1 cup peanut butter chips
2 cups coarsely chopped cashews
directions
Heat oven to 350 degrees F.
In a medium bowl, combine flour, sugar, baking powder, and soda. Cut in butter and 1 teaspoon vanilla until crumbly. Press firmly on the bottom of an ungreased 13 x 9 baking pan. Bake for 15 minutes or until lightly browned.
Top evenly with marshmallows and bake 2 minutes longer or until marshmallows begin to puff. Remove from oven and cool.
Meanwhile, in a heavy saucepan over medium heat, combine sweetened condensed milk and peanut butter chips. Cook and stir until slightly thickened, 6-8 minutes.
Remove from heat and stir in cashews and remaining 2 teaspoons vanilla. Spread evenly over marshmallows. Cool. Chill.
Cut into bars. Store loosely covered at room temperature.
