Sweet And White Potato Salad

ingredients
1 1/2 pound all-purpose potatoes, peeled and cut into 1-inch chunks
1 pound sweet potatoes, peeled and cut into 1-inch chunks
1/3 cup rice vinegar or cider vinegar
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
1 tablespoon Dijon mustard
5  scallions, thinly sliced
directions
Add the potatoes to a large saucepan of boiling salted water. After 3 minutes, add the sweet potatoes. Cook 12 to 15 minutes or until tender. Drain.  
 Transfer to a large bowl and sprinkle the vinegar, salt, and pepper over the potatoes. Toss gently to coat. Let cool 15 minutes.  
 Add the olive oil, mustard, and scallions and toss again. Refrigerate until ready to serve.

Easy and healthy. Thanks for sharing this recipe. Sweet potatoes are not always a hit at my house but this combo worked great for us.
