1/2 pound bacon
3 cups diced cooked sweet potatoes
2 cups pineapple chunks
1/2 cup mayonnaise
1 tablespoon Dijon mustard
2 tablespoons lime juice
1/2 teaspoon freshly ground black pepper
1/2 cup macadamia nuts
romaine lettuce leaves

directions

Cut the bacon slices into 1/2-inch pieces and fry in a skillet until well browned. Drain on paper towels.

Combine the bacon, sweet potatoes and pineapple in a large mixing bowl and toss lightly. In a small bowl combine the mayonnaise, mustard, lime juice and pepper.

Add dressing to the potato mixture and mix lightly but thoroughly. Just before serving, stir in the macadamia nuts.

Serve the salad in a chilled salad bowl lined with romaine leaves.

    I don't particulary like the sweetness of sweet potatoes. I found that in this recipe they did not taste sweet. I thoroughly enjoyed this recipe. The lime may be the reason, but the lime also was not apparent as a obvious flavor in the dish. I will be making this in the future, but would like to adapt it using less calories.

    This is the weirdest sounding salad and I almost passed it by but decided to give it a shot. I will definitley be making it again because there was not even a speck of it left. It was gone in minutes.

    Have made this on a couple of occasions & have had so many positive comments. The only tweak I made to the recipe was adding some coconut essence as I thought that it needed that essential Hawaiian flavour without adding the calories of coconut milk, just adds another dimension..try it
