Sweet Potato And Apple Salad

ingredients
2 pounds yams or sweet potatoes
1/2 cup walnuts
2 tablespoons honey
1 teaspoon lemon peel
1 tablespoon lemon juice
3/4 teaspoon ginger
1/2 teaspoon cinnamon
1 cup plain yogurt
2 large red apples, cubed
3/4 cup celery, thinly sliced
directions
Place unpeeled yams in water and boil until tender. Drain and cool 30 minutes. Toast walnuts about 3 minutes in frying pan. Let cool.
Stir together honey, lemon peel, lemon juice, ginger, cinnamon and yogurt. Peel yams and cube. Add yams, apples, celery and 1/3 cup walnuts to dressing in bowl. Mix gently.
Season to taste with salt. Garnish with remaining walnuts.

What a great recipe - it stands as a dish on its own. Scaled down to two people and a quick and easy dinner! Yes adding a handful of cranberries nicely added to it.

I made this for a Thanksgiving potluck and it was very easy and delicious. I recommend not cooking the yams until completely soft because they continue to cook as they cool down; mine were a little mushy. Also, I added dried sweetened cranberries.
