ingredients
1/4 cup butter, softened
4 slices bread
4 (3/4 ounce ea) slices American, Swiss or Cheddar cheese
6 slices bacon, fried crisp
4 (1/8-inch thick) slices tomato
4 thin slices yellow or Vidalia onions
directions
Warm griddle or skillet over medium heat. Butter one side of each slice of bread. Place bread, buttered side down, on griddle. Top each slice of bread with cheese.
Arrange 3 slices of bacon on each of 2 bread slices. Top each of those slices with 2 tomato slices and 2 onion slices.
When the bread is nicely browned, use a spatula to place the loaded bread slices on a plate. Top with the other slices of bread and cheese. Press down lightly. Do not try to flip the sandwich or the filling will fall out. The melted cheese will help hold the sandwich together.
