Also known as the "Western Sandwich", this popular sandwich is essentially what we know as a Denver omelet between pieces of bread. It's made with eggs, onion, bell pepper, and ham. So, if you like Denver omelets, try one on bread!

8 slices bread, any kind, toasted
2 tablespoons butter
1/4 cup finely chopped onion
1/4 cup finely chopped green bell pepper
4 eggs
1/2 cup finely chopped cooked ham
1/3 teaspoon salt
black pepper, to taste
Melt the butter in a skillet over medium heat. Add the onion and bell pepper and cook, stirring occasionally, until the vegetables are softened. Remove the vegetables from the skillet with a slotted spoon and set aside.
Place the eggs in a bowl and whisk until uniform in color. Stir in the ham, salt, and black pepper. Pour the egg mixture into the skillet. Reduce the heat to medium low and cook, without stirring, until the eggs are set.
Slice the omelet into quarters. Place one section on a slice of toast. Top with some of the reserved onion and bell pepper mixture. Top with another slice of toast. Repeat with remaining toast, egg, and vegetables. Serve the Denver sandwiches immediately.
Try different types of ham or other proteins for varied flavors.
Add fresh herbs like chives or parsley to brighten the flavor of the filling.
Toast the bread right before assembling the sandwich to make sure it's warm and crisp.
Try to keep the heat low when cooking the eggs to prevent them from toughening up.
Melt some cheese on top of the omelet in the skillet to make it extra delicious.
Add a dash of salt and pepper to the vegetables while sauteing for more flavor.
Use a non-stick skillet to minimize sticking and make clean-up easier.
For a breakfast-for-dinner option, serve with a side of crispy hash browns.
Any kind of bread can be used, but hearty varieties like sourdough, whole wheat, or Texas toast add a nice texture, while rye bread offers a different flavor.
You can substitute ham with cooked bacon, sausage, turkey, or even make it vegetarian by adding additional vegetables or using plant-based meat alternatives.
While it's best served fresh, you can prepare the filling (the egg mixture and the vegetable saute) in advance and store it in the refrigerator for a day. Cook the omelet and assemble the sandwich just before serving for best results.
Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. However, the bread may become soggy.
Freezing is not recommended. It's best to freeze the individual components separately, such as the cooked egg mixture, and then assemble fresh sandwiches when ready to eat.
To reheat, place the sandwich in a skillet over low heat or in the oven wrapped in foil. Avoid using the microwave, as this can make the bread chewy.
Cheese can be added to the egg mixture before cooking or placed between the layers of the sandwich.
No, you can use other types of bell peppers, such as red, yellow, or orange, which will add a slightly sweeter flavor. You could also use other vegetables like spinach or tomatoes if preferred.
For a spicier kick, consider adding diced jalapenos, red pepper flakes, or a splash of hot sauce to the egg mixture.
Yes, egg substitutes like scrambled tofu or commercial egg replacers can be used, but the texture and flavor will differ from traditional eggs.

Not to be confused with evaporated milk, sweetened condensed milk is very sweet (and very sticky) and used primarily in desserts.
This iconic whiskey is a "Jack of all trades" when it comes to cooking. Toss it in some pasta, as a savory dipping sauce, and even bake it into something sweet.

SCRUMPTIOUS! This is THE AUTHENTIC "Denver Omelet", but it's being served on bread. Delicious...loved it.

You can't get 5 stars without some kinda gooey CHEESE added in AND you must have HP SAUCE
Yes! About the ketchup, though. You must have a puddle of ketchup on a plate for dipping of the sandwich. Adding it to the sandwich will not do. Enjoy!

I don't care for onion so I omit that but I love gr peppers with eggs. Great combo. Oh, and it needs ketchup, eggs always need ketchup!!

I actually didn't know this had a name! I have been making these sandwiches for years. I actually prefer an omelet on bread so I do change this up sometimes. I also don't put the onion/pepper on top but I scramble it in with the egg. Just easier that way.
