Chicken and your choice of broccoli or spinach are stir fried with a Thai-inspired peanut butter sauce.
4 boneless, skinless chicken breast halves, cut into bite-size pieces
1/2 cup peanut butter
1/2 cup water
2 tablespoons soy sauce
1 tablespoon brown sugar
2 tablespoons peanut or vegetable oil
3 cloves garlic, minced
1/2 teaspoon crushed red pepper
4 cups sliced broccoli or spinach
In a small bowl, blend peanut butter, water, soy sauce and sugar; set aside.
In a wok or large skillet, heat oil over high heat. Add garlic and pepper; stir-fry 30 seconds. Add chicken, stir-fry until firm and white, about 5 minutes. Add broccoli or spinach, stir-fry until bright green, about 3 minutes.
Stir in peanut butter mixture. Cook, stirring constantly until sauce is smooth, about 3 minutes.

Maybe it was the natural peanut butter, but this recipe did not turn out well. Did not care for the taste at all and would not make again.

The only thing I altered for this recipe was to cut down the amount of peanut butter in the sauce and add a little more soy sauce. Brent doesn't care for a really strong peanut butter flavor so I knew he wouldn't like this otherwise. I found the sauce to be quite good and could easily keep the full amount of peanut butter, but it is a predominant flavor in it. I wouldn't really call the sauce spicy though - if you want spicy you'll need to up the amount of crushed pepper. The peanut butter really softens the heat otherwise. The recipe has a ton of flavor overall. The chicken and broccoli were nicely done and the whole dish came together well. I added some crushed peanuts and more crushed red pepper on top when serving.

I made this recipe using the broccoli option and served the dish with white rice - it was a big hit! It very easy to make and I will definitely be making it again. My only area for improvement would be in the peanut sauce. The sauce was not very spicy (I'm sure using more crushed red pepper would help) and it also lacked a bit in flavor, although I'm not sure what I would do to enhance it. I think I may look up a separate peanut sauce recipe to try with this next time.
