With sliced peaches on the bottom and peach nectar in the batter, this cobbler gets a fruity double dose. Just imagine a melty scoop of vanilla ice cream on top of the hot cobbler.

3 cans (29 ounce size) sliced peaches, drained
1 cup quick-cooking oats
1/2 cup Bisquick baking mix
1/2 cup sugar
1/4 cup brown sugar
1/2 teaspoon ground cinnamon
1/4 cup all-purpose flour
1/2 teaspoon baking soda
1/2 cup peach nectar or juice
Place the peaches in the bottom of the crock pot.
In a bowl, stir together the oats, baking mix, sugar, brown sugar, cinnamon, flour, and baking soda. Stir in the peach nectar until a batter forms.
Pour the batter over the peaches in the crock pot. Cover the crock pot and cook on low for 4 hours or until the topping is cooked through.
Serve hot.
While this doesn't get the crispy topping that an oven-baked cobbler does, the soft "biscuity" topping with the warm spiced peaches is comforting and oh-so-delicious when served with vanilla ice cream.
