ingredients
TOPPING
1 cup all-purpose flour
3/4 cup sugar
1 teaspoon cinnamon
1 teaspoon baking powder
1/2 teaspoon salt
1 large egg, beaten
5 tablespoons unsalted butter, melted
FILLING
2 cups sliced strawberries
6 peaches, peeled, pitted and sliced
2 tablespoons unsalted butter
1 teaspoon quick-cooking tapioca
1 teaspoon cinnamon
1 pinch nutmeg
2 tablespoons packed light brown sugar
whipped cream, for serving
directions
To make the topping, sift all dry ingredients together into a bowl. Add the egg and stir until smooth. Add melted butter and stir until smooth.
Gather the dough into a ball, flatten into a dish and wrap in plastic wrap. Refrigerate for at least 4 hours or overnight.
Preheat the oven to 350 degrees F.
To make the filling, put the sliced strawberries in a bowl.
Melt the butter in a medium frying pan over low heat. Add the peaches, toss, and cook for 2 minutes. Stir in the tapioca, then stir in the cinnamon and nutmeg.
Add the peach mixture to the strawberries. Gently stir in the brown sugar. Spoon the mixture into a shallow 1 1/2-quart casserole. Let the filling cool slightly.
Roll out the chilled dough between two pieces of waxed paper to a 3/4" thickness. Using a 2 1/2"-3" cutter, cut the dough into mounds. Layer them over the fruit, covering completely by overlapping the rounds.
Bake for 35-40 minutes, until the crust is lightly browned and the filling is bubbling.

I never thought of peaches & strawberries before. This cobbler is the best I have ever had. Very rich but the fruit flavors shinned through.
