An iconic salad. Made with iceberg lettuce, bacon, blue cheese dressing, and garnished with tomato and red onion. Use your favorite blue cheese dressing recipe or buy some pre-made if desired.
1 medium head iceberg lettuce, cut into quarters
blue cheese salad dressing
6 slices bacon, cooked and crumbled
1/4 cup chopped red onion
1/4 cup diced tomato
Place the lettuce wedges on chilled salad or dinner plates with the point of the wedge facing up.
Drizzle the blue cheese dressing over the wedges, using as much or as little as you wish.
Sprinkle the bacon, onion, and tomatoes over the salad wedges and serve immediately.

Call me a luddite, but iceberg lettuce is my favorite. And a wedge salad is my favorite way to prepare salad. Well chilled lettuce and a sharp knife get you neat layers of all the ingredients, not floppy huge torn leaves that leave dressing all over your mouth on their way in. This recipe is easy and refreshing.
