ingredients
6 cups precooked rice (steamed)
1 1/2 cup shredded cheddar cheese
1 1/2 cup shredded Monterey jack cheese
2 cans (16 ounce size) creamed corn
1 1/3 cup sour cream
2 bunches green onions, sliced thinly
2 cans (4 ounce size) diced green chilies, drained
2 teaspoons dried cilantro
1 teaspoon salt
1/4 teaspoon cayenne pepper
directions
Combine all of the ingredients and pour out into a greased 3 qt. casserole dish. Cover and chill for up to 2 days.
To finish the dish, heat the oven to 350 degrees F and bake covered for 20 minutes. Remove the cover and bake for 20 minutes longer, until it is golden.
