Tetrazzini-Style Macaroni Casserole

A baked pasta dish made with cooked turkey or chicken (great for using up leftovers), ham, olives, and cheese in a cream soup sauce.

ingredients

14 ounces elbow macaroni pasta
2 tablespoons salad oil
2 cans (10.75 ounces size) condensed cream of mushroom soup
2 cans (10.75 ounces size) condensed cream of chicken soup
1 1/2 cup milk
OR
1 1/4 cup milk PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
1/4 cup sherry
4 cups cubed cooked turkey or chicken
1 cup cubed cooked ham
1/2 cup chopped green bell pepper
1 cup halved pitted ripe olives
1 cup grated Parmesan cheese
1 cup slivered almonds

directions

Cook pasta as directed on package. Drain; pour oil over pasta and toss.

In each of 2 ungreased 2-quart casseroles, mix half each of the soups and milk. Stir in half the turkey, ham, spaghetti, green pepper and olives in each casserole. Sprinkle half of the cheese over each casserole.

Heat oven to 375 degrees F. Bake uncovered 20 minutes. Sprinkle half of the almonds over each casserole and bake 10 minutes longer.

These casseroles can be prepared oven-ready up to 24 hours ahead and stored covered in the refrigerator. Bake 10 minutes longer than the recipe directs.

    This pretty good, I halved the recipes though. Think I will cut down on the milk next time. But it was a fairly quick meal, perfect for the weekday

    For a cream of soup casserole, this was quite good! Now, it's not a real tetrazzini (no mushrooms??), but it has great flavor and is easy to prepare. The ingredients can be prepped while the pasta cooks. It also holds well when prepared in advance - we made ours about 2 hours in advance. One suggestion: either turn on the broiler during the last few minutes of baking or pre-toast the almonds before adding to the casserole, it'll add a little extra flavor.
