Redfish Parmesan

ingredients
6 redfish fillets, 8 to 10 ounces each
2 cups half and half cream
2 eggs
1 cup flour
2 teaspoons white pepper
3/4 cup cracker meal
2/3 cup Parmesan cheese
1/2 teaspoon paprika
2 tablespoons oregano
1 tablespoon basil
2 tablespoons parsley
1/2 teaspoon cayenne pepper
1 cup olive oil
1/4 pound butter, unsalted
2 lemons, cut in wedges, for garnish
directions
Combine all ingredients except the flour, half and half cream, eggs, oil and butter. Dust the fillets in the flour, then dip in cream and egg mixture. Coat with all of the other dry ingredients combined.
Saute in olive oil and butter on medium high heat until fillets are golden and fish starts to flake. Garnish with lemon and parsley.

This was a very good recipe, easy to make and the redfish was very tasty. I will definitely make it again.!

Very good! Teenage boys made hogie style sandwiches with it. My youngest is not a fish fan but still ate the whole thing! I cut the oil in half and still had plenty. The only thing we added was garlic salt. Otherwise, it might need to be "seasoned to taste" upon serving. We will definitely make it again!

This recipe is awesome. There is just enough heat from the cayenne pepper and the other spices give it a wonderful taste. The only thing I might try would be to cut down on the butter and oil. It's a lot in this recipe.

My husband and I tried this recipe for something different on our anniversary and loved it! Just the smell of the dry mix made us start salivating. And then...ohhh...just wait until you start cooking them! I bet this recipe would be good with chicken too. Thank you for the awesome dinner idea. We enjoyed making it together and most of all getting to eat it together. The bonus was having all three kiddos gone for the experience to be even more rewarding. Good food and good company!

This receipe was awesome. I used black drum instead of red fish. I did not have cracker meal, but just broke up some crackers in a plastic bag. My family loved it.
