Eggs are individually baked in ramekins with half-and-half, seasonings, and cheese.

2 teaspoons butter, softened
4 tablespoons half and half
1/2 teaspoon salt
1 dash black pepper
4 eggs
1 ounce shredded American cheese
1 tablespoon chopped fresh chives or parsley
Heat oven to 400 degrees F. With butter, lightly grease 6-ounce custard cups or ovenproof ramekins; place on cookie sheet.
Add 1 tablespoon half and half, 1/8 teaspoon salt and dash pepper to each cup. Break 1 egg into each cup. Sprinkle with cheese and chives.
Bake at 400 degrees F for 10 to 12 minutes or until set. Remove from oven; let eggs stand for 2 minutes before serving.

Would these freeze well (after cooking)? I need some freezable ideas to bring to someone as they recover in the hospital, which I can just microwave for them there.
Cooked egg dishes can freeze well but I'd highly recommend making a test batch first and freezing/reheating to make sure. You can use the serving size tool to change it to 1 serving and just make one to test it out.

Love the recipes that are not only easy, but tasty! The ingredients in this are so simple yet the baked eggs have so much flavor. They were perfectly done to our liking in 12 minutes. Would be an easy way to make eggs for a weekend brunch with friends.
