Pork cubes are browned and slow cooked with onion, cumin, oregano, green chiles, tomatoes and garlic.
3 pounds boneless pork, cubed
1 tablespoon oil
1 onion, chopped
1 teaspoon cumin
1 teaspoon oregano
1 cup chicken broth
4 ounces chopped green chiles
16 ounces stewed tomatoes
2 cloves garlic, minced
salt and pepper, to taste
In a large skillet over medium-high heat, brown the pork in oil. Stir in onions and cook until soft. Drain off juices and fat.
Place pork and onions in crock pot. Stir in remaining ingredients. Cover; cook on low for 8-10 hours. Serve over rice.

Fabulous! I only added one can of stewed tomatoes and the rest was diced. Also, added two extra cans of green chiles and used 4 lbs of cubed pork. A teaspoon of salt and pepper.

Excellent. I doubled the green chilis. Used Rotel hot tomatoes and chili, also doubled.

It wasn't like other green chile I've had but it was very good.

I used diced tomatoes instead of stewed and added more green chiles. Very good.

The pork was perfectly done! The flavors faded a bit with the long cooking time so I added more (cumin, oregano, etc) during the last 30 minutes or so of cooking (always a good practice to check the flavors towards the end when crockpot cooking). Next time I'd add the "hot" green chiles instead of the regular.
