The pistachios give this creamy ice cream a natural green color and nutty flavor. Red pistachios can also be used for a pink-hued ice cream (with the same pistachio flavor).
1 tablespoon cornstarch
4 ounces sugar
8 ounces milk
4 eggs, well-beaten
8 ounces cream, whipped
6 ounces blanched pistachio nuts
Mix the cornstarch and sugar in a saucepan. Stir in the milk gradually and bring to boil, stirring constantly.
Stir this mixture into the eggs, then return mixture to the saucepan. Cook over moderate heat until mixture thickens (must not allowed to boil), then remove from heat and let cool.
Chop the pistachios and fold into the custard with the cream. Pour mixture into an ice-cream maker and churn until frozen. When the ice cream is ready, store in the freezer or serve.
