1 medium onion, chopped
2 cans (15 ounce size) spinach (drained)
1 can (small size) plum tomatoes chopped
1 can (4 ounce size) green chiles chopped and drained
1 package (8 ounce size) cream cheese
1 cup half and half
10 ounces grated Monterey jack cheese
1 tablespoon red wine vinegar
2 tablespoons sour cream
salt and pepper, to taste
Saute onion in skillet over medium until softened. Add tomatoes and chilies and then cook 2 minutes. Transfer to large bowl and stir in spinach, cheese, cream cheese, half and half and vinegar. Season with salt and pepper. Spoon mixture into shallow baking dish bake in 400 degrees F oven until dip is bubbly and top is light brown, about 35 minutes. Top with a spoon of sour cream and serve with tortilla chips.

I should have read the reviews prior to making this. I made this tonight and it was totally missing something that I could not put my finger on. TIP: don't make a recipe for the first time with chaos in the kitchen AKA toddlers, because you can't focus on what you are doing and I just found the first recipe that came up with what I had on hand in my kitchen. If I was thinking at all, I would have sautéed the spinach with the chiles and onions. I think the leftovers I will sauté tomorrow and add Alfredo sauce and white American and mozzarella and see how it turns out.
Ok I work in the Cheddars kitchen and I make the spinach dip all the time. This is waaaay off. It has frozen chopped spinach, a creamy mixture of melted cream cheese, ALFREDO, white american cheese and 1/2 and 1/2 with onion powder, garlic powder, salt and pepper, and "salsa seasoning" you cook the spinach then add it to the cheesy mixture, put it in the fridge for 2 hours to thicken, then melt about half a bag of shredded MOZERELLA on top. Once the mozerella is melted you stir it in and put a dollop of sour cream on top!
this was nothing like Cheddars....not enough cheese. I think theirs has more than one kind of cheese in it. The can spinach does not have a good flavor. It might be better if frozen was used and more cheese of different variety. I will not fix again!
I only have a question. can you make this ahead of time like three days and then bake it the day you are to serve it?
You can make this ahead, but I personally feel 3 days in advance would be too far in advance. For best results I wouldn't make it more than a day in advance (think safety with the dairy products used in it)
I worked at Cheddar's for over 6 years... This recipe is nothing like Cheddar's Spinach Dip Recipe. I can't remember what exactly was in the recipe. BUT I do remember there was 4 different types of cheeses (all white), heavy cream, Frozen spinach, chynne pepper, and sour cream on top. Hope that helps! Good Luck

Okay, so it wasnt bad, however it def. didnt taste like cheddars. it needs like 5 more ounces of cheese, 2 ounce less of chiles and like half a can of spinach instead. Im going to keep trying till I get it right. But I would def. alter the recipe this gives you

The canned spinach ruins the flavor. I have been making this same recipe for a few years now and just substitute it for a bag of frozen chopped spinach. NOT THE LITTLE SQUARE BLOCK THATS FROZEN. I also add a little extra cheese and half and half cuz I like it saucier.

it wasn't bad...but it wasn't good...like the lady above said...it lacked cheese and had way too much spinach...i believe the recipe could be a little more detailed as in the size of cans.

This recipe was great! It's like cheddars at home. Since our local Cheddars doesn't offer the Santa Fe Dip, I prepared the spinach dip without the onion, green chilles, and tomatoes. It was great!

This recipe was terrible. It is nothing like Cheddar's. It may have been the canned spinach or just too much of it. It also needed more cheese. The best part was the dollops of sour cream. I will never make this again.

This dish was excellent. It taste just like the dip in Cheddar's. I took some to work to share with my co-workers and they loved it. I have been making it just about every weekend,I love it. Pat
