ingredients
1 package (3 ounce size) cook-and-serve butterscotch pudding mix
1 1/4 cup sugar
1/2 cup evaporated milk
2 cups pecan pieces
directions
In a large saucepan, mix butterscotch pudding, sugar and milk. Bring to a boil, stirring constantly, for 2 minutes.
Add pecans and boil for another 1 1/2 minutes, stirring constantly. Remove from heat.
Beat until candy begins to cool and drop by tablespoons on wax paper.

I used this recipe as a starting point because I wanted chewy pralines. So I added 1/4 a cup of butter and cut the sugar to 1 cup while adding 1/4 cup of light karo syrup. I melted the sugar and syrup together then added milk and butterscotch pudding mix and stirred till mix disolved. Removed from heat to slowly add the butter. Then brought to boil for 2 min. Added nuts and boiled for 2 minutes more. Removed from heat and stirred until it starts to cool and stiffen. Then I dropped spoonfuls onto a buttered pan. The pralines turned out great. I might try it with a different flavored pudding!
