10 ounces frozen spinach thawed and squeezed semi-dry
1 can artichoke hearts drained and chopped
1/4 cup butter
2 cloves garlic, pressed
3 tablespoons chopped yellow onion or scallion
1/2 cup cream or half and half
1 package (8 ounce size) cream cheese cut in bits
1/2 cup fresh grated Parmesan Cheese ( or similar dry cheese)
3 dashes tabasco sauce or to taste
1/2 cup grated sharp Cheddar cheese

directions

Melt butter on medium-low heat. Add garlic and onion stir for 1-2 minutes till lightly golden. Add drained spinach; mix; add artichokes; mix.

Add the half and half or cream and mix well. Lower heat and stir in the cream cheese and parmesan; mix until completely melted. Add tabasco sauce to taste.

Transfer to pie plate or shallow dish. Sprinkle cheddar cheese on top. Melt cheese in 350 degrees F oven or in microwave (if using microwave safe dish) until warm and melted. Serve with crackers, pita bread or your favorite dippers.

    This recipe has been my friend and foe. I made it and EVERYONE loves it so that I now have to make it for EVERY gathering like it's the only thing I can make. It's relatively easy with all of the ingredients...it's just the amount of times I have to make it yearly. Great recipe: thank you for sharing it.

    This is amazing. I have tried many spinach dips and this one by far has the best base of ingredients. I did adjust it though to put more sharp cheddar in, as well as a bit of cayenne pepper which TOTALLY changes it and makes it a lot better!

    I just made this dip and I'm so sorry to say I just wasn't impressed. My husband agreed. It was not as creamy as we would of liked and the taste was just so-so. We are spoiled by a local resturant, Arizona Steakhouse, they have the best Spinach/Artichoke dip. I will try it again and maybe add some more half & half? Any suggestions?
