ingredients
3/4 pound boneless, skinless chicken breast tenders, cut into 1/2-inch pieces
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon garlic salt
1 tablespoon olive or vegetable oil
1 can (14.5 ounce size) Mexican style stewed tomatoes, undrained and finely chopped
3/4 cup chicken broth
1 can (about 15 ounce size) black beans, drained
1 package (12 ounce size) fettuccine, uncooked
chopped fresh cilantro
directions
Sprinkle chicken with seasonings.
In large skillet over medium heat, heat oil; add chicken. Cook until no longer pink, about 4 minutes; stir in stewed tomatoes with juice, chicken broth and beans. Heat to boiling; reduce heat and simmer 5 minutes.
Meanwhile, cook pasta according to package directions; drain. Toss hot pasta and sauce; sprinkle with cilantro.
