A fresh tasting cucumber and red onion salad with a bit of tang to it. The salad will keep for 4-5 days in the refrigerator.

2 cups sliced, unpeeled cucumbers
1/2 cup sliced red onions
1/2 cup white vinegar
1/2 cup water
1/4 cup sugar
1 teaspoon salt
1 dash black pepper
1 teaspoon minced garlic, optional
chopped fresh parsley, optional
Place the sliced cucumbers in a bowl. Add the onions, vinegar, water, sugar, salt, pepper, garlic, and parsley if using. Mix well.
Cover the bowl and refrigerate overnight. Stir before serving.

I peeled the cucumbers and had white onion. Great recipe.

I live in Texas and visited my brother and his wife in Illinois a couple of weeks ago, and we used this recipe. It turned out delicious, even though we cut the sugar and salt in half and only had white onions available for use. We added some diced sliced cherry tomatoes at the request of my sis in law. She preferred more sugar and salt, and my sister, who provide the cucumbers, prefers them to be pared. We used a half and half mix of cider vinegar and balsam vinegar. So we didn't exactly stick to the recipe as written, but we all enjoyed the cucumbers. I will definitely use it again.
