ingredients
8 ounces tube pasta
1 tablespoon olive oil
2 cucumbers, thinly sliced
1 onion, thinly sliced
1 1/2 cup sugar
1 cup water
3/4 cup vinegar
1 tablespoon prepared mustard
1 tablespoon dried parsley flakes
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon garlic salt
directions
Cook pasta according to package directions; drain and rinse in cold water; drain well. Place in a large bowl; stir in oil, cucumbers and onion.
Combine remaining ingredients; pour over salad and toss. Cover and chill for 3-4 hours, stirring occasionally. Serve with a slotted spoon.

Made this today - excellent! I used Rice Wine Vinegar, that's the only deviation from the orginal recipe. Tangy, slightly sweet, the pasta really adds to this dish!

I was looking for a simple marinated cucumber salad recipe when I ran across this recipe. I made it without the onions and instead of parsley I used italian seasoning. My husband and I really liked it! It is defiantly a keeper! Great side dish to a spicy bbq main course.
