If you like lettuce leaf tacos or sandwiches for their low-carb crunch, it's time you expanded your love to Asian cuisine. Chicken stir-fry with peanut sauce is right at home in a fresh lettuce wrap.

1 pound boneless, skinless chicken breast halves
1 package (1 pound size) frozen lo mein stir-fry meal starter
2 tablespoons chili garlic sauce (available with the Asian sauces)
2 tablespoons soy sauce
3 tablespoons oil
2 cloves garlic, minced
1 tablespoon sugar
2 tablespoons peanut butter
2 tablespoons water
8 large leaves Bibb lettuce
1 1/2 cup grated carrots
1/3 cup chopped peanuts
1/4 cup finely chopped green onions
2 tablespoons finely chopped fresh cilantro
Place the chicken between sheets of waxed paper. Pound to 1/4-inch thickness with a meat mallet. Slice the chicken into 1-inch pieces and place in a bowl.
Combine the sauce from the lo mein stir-fry package, chili garlic sauce, and soy sauce in a bowl. Mix well. Transfer 1/4 cup of the mixture to the bowl with the chicken. Add 2 tablespoons of the oil to the chicken and mix well.
Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Add the chicken and cook, stirring constantly, for 3-4 minutes or until the chicken is no longer pink. Remove the chicken from the skillet with a slotted spoon and set aside.
Add 3 tablespoons of the soy sauce mixture to the wok. Add the garlic and lo mein noodles and vegetables. Cook, stirring frequently, for 5 minutes or until the vegetables are cooked.
Combine the remaining soy sauce mixture with the sugar, peanut butter, and water. Mix until smooth.
Arrange the lettuce leaves, grated carrots, vegetables and noodles, and chicken on a serving platter. Garnish with chopped peanuts, green onions, and cilantro. Allow everyone to fill lettuce leaves with the chicken and vegetables and top with the peanut sauce, to taste. Roll up the lettuce leaves around the filling to eat.
