2 medium tomatoes, chopped
1 can (4 ounce size) diced green chilies
1/3 cup sliced green onions, including tops
1 tablespoon chopped fresh cilantro
1 teaspoon vegetable oil
3/4 pound boneless, skinless chicken breasts, cut into 1-inch cubes
2 tablespoons water
1 envelope (1 ounce size) taco seasoning mix
8 large burrito size flour tortillas, softened as per package instructions

Combine the tomatoes, green chiles, green onions, and cilantro in a bowl. Mix well then set aside.
Heat the oil in a large skillet over medium-high heat. Add the chicken and cook, stirring frequently, for 2 minutes or until lightly browned on all sides.
Add the water and taco seasoning to the skillet. Cook, stirring occasionally, until the chicken is cooked through and the liquid has thickened a little.
Stir the tomato mixture into the skillet. Turn off the heat and mix well.
Place a tortilla on a flat work surface. Place about 1/3 cup filling just off center on the tortilla. Roll the tortilla up and then wrap in plastic wrap. Repeat with remaining wraps.
Refrigerate the wraps for 1 hour or until ready to serve. Remove the plastic wrap then slice the sandwiches in half and serve.
