directions
Add meat and all the ingredients except the "after 5 days" ingredients, to a large glass or pottery bowl. Stir thoroughly and set in refrigerator for five days. Turn meat over twice a day with a wooden spoon.
After 5 days, remove meat from liquid; discard liquid.
In roasting pan, brown bacon with meat. Add onion, celery, carrots and a large spoonful of tomato paste. Continue browning. Add water for moisture, but do not cover.
Roast in oven at 350 degrees F for 3 to 3-1/2 hours or until tender. Continue adding water for moisture, while in the oven.
Remove meat and drain liquid. If needed, mix a little flour with the red wine and stir into cooking juices to make sauce. When serving, slice very thin.
