Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

Very good and very simple! However, I found that I had to reduce the oven temp to 290 and bake for only 35-40 min. The first time I made them, I set out to follow the instructions exactly and the cookies were overdone at only 45 minutes. I found it easy to pry the entire sheet of cookie out of my pan and cut on a cutting board with a long, serrated bread knife. Yum! However, if I were just keeping them for myself, I'd probably just break them up into irregular chunks and skip the cutting mess. Thanks for the recipe!
