A great way to dress up a mild flavored fish is with a bold spice blend, like this African curry-style seasoning mix.

1/2 pound dry red chiles
1/2 pound coriander seeds
2 ounces cumin seeds
1 ounce ground turmeric
1 ounce mustard seeds

directions

Combine all the spices in a spice grinder and process until it is a fine powder. Store in an airtight container for up to 6 months.

Use 2 teaspoons for every pound of fish.

    I haven't used this on fish but I have used it several times on shrimp and it really is good. I sprinkle it on the shrimp and let it sit for about 15 minutes in the fridge then grill it on skewers.
