Nantucket Lobster Salad

ingredients
1 pound New England lobster meat
1 stalk celery, sliced
1 carrot, shredded
1/2 medium onion, diced
3/4 cup mayonnaise
directions
Cut the lobster into largish 3/4-inch chunks. If there is juice present, reserve it and add as much as you can at the end without the mixture turning soupy.
Mix all ingredients in a bowl with your hands.
Serve on red leaf lettuce, or in a fresh French roll as a sandwich.
