Even picky eaters love this simple crock pot casserole. Egg noodles, chicken, vegetables, are cooked in a creamy, buttery cheese sauce.
ingredients
8 ounces egg noodles
3 cups chopped, cooked chicken
1/2 cup diced celery
1/2 cup diced green bell pepper
1/2 cup diced onion
1 can (4 ounce size) sliced mushrooms, drained
1/2 cup chicken broth
1/2 cup shredded Parmesan cheese
2 tablespoons butter, melted
1 cup shredded sharp cheddar cheese
1/2 teaspoon dried basil
1 1/2 cup small curd cottage cheese
1 can (10.75 ounce size) cream of chicken soup
directions
Grease the inside of the crock pot.
Cook the noodles until not quite al dente. Drain well.
Combine the noodles in a large bowl with the chicken and remaining ingredients. Mix well then pour into the greased crock pot.
Cover the crock pot and cook on low for 4-6 hours or until heated through and the noodles are tender.

Super easy and great for kids. We used rotini noodles and Mushroom soup instead of cream of chicken, half the sharp cheddar and was still really cheesy.

I made this dish with whole wheat noodles and canned chicken. I cooked in on low and it turned out great! It's really tasty. Everyone I've made it for has had seconds and thirds!
