ingredients
1 tablespoon canola oil
1/2 cup diced Spanish onion
2 cups canned, diced tomatoes in their juice
2 medium oranges, juiced and zested
2 tablespoons sugar
salt and freshly ground black pepper
directions
Heat oil in medium saucepan over medium heat. Add onions and saute until translucent, about 3 minutes. Add tomatoes, orange juice, zest and sugar, and reduce, stirring occasionally, until mixture forms thick paste, about 25 minutes.
Season with salt and pepper to taste. Serve at room temperature with grilled meat, fish or sandwiches. Keeps for 2 days in refrigerator.
