Tomato And Green Apple Preserves

ingredients
1 pound tart green apples
4 pounds firm, ripe tomatoes
2 slices lemon, 1/4-inch thick
4 cups sugar
directions
Wash, pare, quarter, core and cut apples into small cubes. Rinse, scald, peel, and cut tomatoes into small pieces.
Mix apples, tomatoes, and lemon in a large kettle. Bring to simmering over medium heat and stir in the sugar. Cook gently, uncovered, until of desired consistency, about 1 1/2 hours. Stir occasionally as the mixture begins to thicken.
Ladle preserves into clean, hot jars. Seal, following manufacturer's directions. Process by simmering in boiling water bath for 10 minutes.
