ingredients
1 cup whole-wheat flour
1 teaspoon soy flour
1 teaspoon baking soda
1/4 cup finely chopped peanuts
1 large egg
1/4 cup canola oil
1 teaspoon pure vanilla extract
1/3 cup honey
1 cup grated carrots
directions
Preheat oven to 325 degrees F.
In large bowl, combine flours, baking soda, peanuts. Mix in egg, oil, vanilla, honey and carrots until well-combined.
Pour batter into an 9-inch-square cake pan and bake 15-20 minutes at 325 degrees F or until done.
