1/4 cup minced red onion
1 tablespoon sugar
1 tablespoon finely chopped seeded jalapeno pepper
2 teaspoons cider vinegar
2 teaspoons low-sodium soy sauce
1/2 teaspoon salt
1/2 teaspoon ground allspice
1/2 teaspoon dried thyme
1/2 teaspoon black pepper
1/4 teaspoon ground red pepper
8 skinless, boneless chicken thighs
cooking spray
Combine first 10 ingredients in a large bowl. Add chicken, tossing to coat.
Heat a grill pan over medium-high heat. Coat pan with cooking spray. Add chicken to pan and cook for 4 minutes.
Turn chicken over and cook for 6 minutes or until done.

Don't let the long list of ingredients scare you, this recipe was assembled and cooked in no time. You can, of course, adjust any of the seasonings to your personal preference but I felt the combination as written worked great. I prefer chicken thighs over chicken breast meat because the dark meat stays more moist. You do get more calories, but I think the texture and flavor is better. If you substitute white meat in this recipe make sure to adjust the cooking time as needed.
