Slow Cooker Sofrito Chicken

ingredients
2 tablespoons olive oil
3 1/3 cups prepared sofrito
2 tablespoons minced garlic
3 celery stalks, sliced thinly on the diagonal
1/4 teaspoon kosher salt
1/2 teaspoon black pepper
2 pounds skinless, boneless chicken thighs, fat trimmed
directions
Grease a slow cooker with olive oil (leave excess in the crock). Add all ingredients, except chicken thighs, to the slow cooker crock and mix well to combine.
Add the chicken thighs and toss to coat chicken with sofrito mixture. Cover and cook on LOW for 8 hours.

I made this receipe Sunday before I left for church. I thought the taste was really good with the exception of being a little oily. I would use 1 tablespoon of oil instead of 2. other than that I was really good. I love the taste of Sofrito.

Sofrito is a mixture of vegetables used in Latin American cooking. You can usually find it in ethnic sections of larger grocery stores (or specialty stores)
