Cajun Chicken Bites With Apricot Mustard

ingredients
2 teaspoons cayenne pepper
2 teaspoons black pepper
2 teaspoons thyme
1 teaspoon white pepper
1 teaspoon salt
1 tablespoon garlic powder
5 chicken breast halves
2 tablespoons butter
2 tablespoons oil
1 1/2 cup apricot jam
6 tablespoons prepared mustard
1 tablespoon chili powder
directions
In a bowl, combine cayenne pepper, pepper, thyme, white pepper, salt, and garlic powder; mix well. Sprinkle over boneless chicken breasts cut into bite-sized pieces and set aside for 30 minutes.
Heat butter and oil in a skillet over medium-high heat; add the chicken and saute until done, about 5 minutes. Remove and drain.
Meanwhile, combine apricot jam, prepared mustard, and chili powder in a saucepan. Heat gently, stirring frequently, until the jam is melted and smooth. Serve with the chicken.
