ingredients
8 beef frankfurters
1 tablespoon flour
8 French bread rolls
4 tablespoons grated Parmesan cheese
MARINADE
1 cup water
3 tablespoons lemon juice
1 envelope (single serving size) dry onion soup mix
1 envelope (single serving size) dry tomato soup mix
1/2 teaspoon dry mustard
directions
Score frankfurters diagonally and set aside.
Combine the water, lemon juice, soup mixes, and mustard in a skillet over medium-high heat. Stir until the mixture boils. Remove from heat and add the frankfurters. Let stand, covered, for 20 minutes.
While the frankfurters are marinating, preheat the grill or broiler.
Remove the frankfurters from the marinade (reserve marinade). Place on the grill 4-inches from the heat or on a broiler pan 4-inches below the heating element. Cook for 7-10 minutes, turning frequently, until heated through.
Meanwhile, stir the flour into the reserved marinade in the skillet. Heat to boiling, stirring constantly, until thickened.
To serve, place the frankfurters in the rolls. Spoon the thickened sauce over the top and sprinkle with Parmesan cheese.
