Beef franks are served fajita-style on flour tortillas with seasoned bell peppers and onions.

1 package (16 ounce size) jumbo beef franks
2 tablespoons oil
1 red bell pepper, cut into strips
1 green bell pepper, cut into strips
1 yellow bell pepper, cut into strips
1 onion, cut into rings
1/4 teaspoon chili powder
1/4 teaspoon cumin
8 flour tortillas (6 inch), warmed
Heat franks as directed on package, or grill until thoroughly heated (160 degrees F).
Heat oil in large skillet on medium heat. Add peppers, onion, chili powder and cumin; cook and stir 5 minutes or until vegetables are tender-crisp.
Serve franks on tortillas, topped with pepper mixture and rolled up.

What a fun recipe! I used bison brats in place of the beef franks but you can use whatever kind of hot dogs or brats you like. We cooked ours on the stovetop in beer while the peppers and onions were being sauteed. Fun *and* tasty!
